Zucchini pancakes


Ideal for breakfast

INGREDIENTS:

  • 2/3rd of a zucchini

  • 100gm of flour

  • 2 eggs

  • 1 shot of milk

  • Feta cheese

  • Mint

  • Lemon

  • Espelette pepper (red pepper flakes will work just as good, but I particularly love the Espelette pepper that my mum sends me from the South of France)

  • Salt & pepper

INSTRUCTIONS:

  1. Take 2/3rd of your zucchini. Cut the zucchini in small (about 3cm) and thin slices. The thiner, the better. Put the slices in a bowl​

  2. In the same bowl, add 2 eggs and start mixing

  3. Add the shot of milk and continue to mix

  4. Add some Espelette pepper, salt (more than you would usually do) and pepper

  5. In another bowl put your flour and make a little wole in the middle to welcome the zucchini mix

  6. Pour the zucchini mix on the flour and mix with a fork.

  7. Heat up your pan with some butter.

  8. Pour half of the mix and the pan. Wait about 3min for it to golden and flip it.

  9. Once cooked, spread some feta cheese, some mint and some lemon on top of the pancake. Voilàààà!
